This means that tension has been put on the spring inside your watch which then turns (or moves) the gears inside the watch. There is a pendulum inside the watch that swings back and forth to keep winding the gears thus making your watch function. This process causes the watch to store power like in an electrical substation and then the watch will keep working of its own accord. If you wear the watch it will stay working, however if you place the watch down for example on a side table beside your bed overnight and forget to wear it the next day the watch will eventually cease to work. .This process by which the watch slows down is called de-winding or for better understanding you might call it un-winding. That is where the term self-winding watch comes from.
